  • 1 cup plain flour
  • 1 1/2tablespoons cornflour
  • 1 1/3 cup frozen peas
  • 8 frozen corn cobs
  • flavoured gravy butter
  • 1tablespoons Cajun seasoning
  • 1tablespoons paprika
  • 24grams sachet roast chicken
  • 3/4 cup buttermilk
  • 2 free range eggs
  • vegetable oil
  • 4 chicken breast schnitzels
  • 475grams classic potato mash

Description

This easy recipe puts a Southern fried twist on the humble chicken schnitzel. Think: golden, crispy and delicious.

Method

Step 1 of 5

Place buttermilk and eggs in a large, shallow dish, whisking to combine. Add chicken, turning to coat.

Step 2 of 5

Place flours, seasoning and paprika in another shallow dish and season. Working with 1 chicken piece at a time, dip into flour, shaking off excess. Return chicken to buttermilk mixture, turning to coat, then dip again into flour mixture. Set aside on a floured plate. Repeat with remaining chicken and flour and buttermilk mixtures.

Add enough oil to a large frying pan to come 1cm up side of pan. Heat over medium-high heat. Working in batches, cook chicken, turning, for 6 minutes or until golden and cooked through. Transfer to a plate lined with paper towels.

Step 4 of 5

Meanwhile, cook corn in a large saucepan of boiling water for 8 minutes, adding peas in last 2 minutes of cooking. Drain, transfer to a bowl and cover to keep warm.

Step 5 of 5

Heat mash and make gravy according to packet instructions. Serve schnitzels with mash, corn topped with butter, peas and gravy.
