- 1/3 cup Woolworths extra virgin olive oil
- 2 corn tortillas, cut into wedges
- 500grams lean beef mince
- 35grams taco seasoning
- 420grams black beans no added salt
- 1 baby cos lettuce, trimmed, finely shredded
- 250grams cherry tomatoes, halved
- 1 Lebanese cucumber, roughly chopped
- 100grams Thomas Dux Vintage Cheddar, coarsely grated
- 3 spring onions, thinly sliced
Description
This fuss-free beef taco salad is perfect for when you want something quick, easy and delicious. This tasty taco bowl is ready in less than 30 minutes.
Method
Step 1 of 4
Heat half of the oil in a large frying pan over medium heat. Cook half of the tortilla, turning, for 1 minute or until golden and crisp. Transfer to a paper towel-lined plate. Repeat with remaining oil and tortilla wedges.
Step 2 of 4
Add mince to same pan over medium-high heat and cook, breaking up lumps with a wooden spoon, for 7 minutes or until browned. Add seasoning and cook for 1 minute or until fragrant.
Step 3 of 4
Add undrained beans and cook, stirring, for 4 minutes or until liquid has almost evaporated.
Step 4 of 4
Divide lettuce, tomato, cucumber, mince mixture, cheese and tortilla among bowls. Serve scattered with onion.
