Description

Golden, crispy chicken schnitzel served with chunky creamed corn and crisp greens will become a family favourite. The best bit? It’ll be ready in 25 minutes.

Method

Step 1 of 4

Using a sharp knife, remove kernels from corn cobs. Discard cobs.

Step 2 of 4

Melt butter in a medium saucepan over medium heat. Add flour and cook for 2 minutes, stirring, or until mixture bubbles and has thickened. Gradually add milk, then bring to the boil over medium-high heat. Add corn and stir to combine. Reduce heat to low and simmer, uncovered, for 10 minutes or until sauce has thickened and corn is tender.

Meanwhile, heat oil in a large frying pan over medium heat. Cook chicken for 3 minutes on each side or until golden and heated through. Add lemon, cut-side down, for the last minute of chicken cooking, or until charred.

Step 4 of 4

Bring a medium saucepan of water to the boil over high. Cook broccolini for 3 minutes or until tender. Drain. Divide creamed corn among plates. Top with chicken, broccolini, spinach and lemon. Serve seasoned with pepper.
