  • 1tablespoons maple syrup
  • 1tablespoons extra virgin olive oil
  • 1 lemon, juiced
  • 1teaspoons Dijon mustard
  • 4 Woolworths garlic chicken Kyivs
  • 400grams Kent pumpkin, unpeeled, cut into wedges
  • 5milliliter olive oil cooking spray
  • 2teaspoons lemon pepper seasoning
  • 340grams round beans, cleaned & cut, trimmed
  • 1/2 bunch kale, stems discarded
  • 1/2 cup walnuts
  • 1tablespoons maple syrup

Description

Crumbed stuffed chicken oozes with flavour and is perfectly paired with tender greens, crunchy walnuts and a zingy dressing.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper. Place chicken on 1 side of 1 tray and pumpkin on the other side. Spray both with oil, then sprinkle both with seasoning. Bake for 25 minutes or until chicken is cooked through and pumpkin is tender.

Place beans and kale on second tray and spray with oil. Place walnuts, in a single layer, over beans and kale, then drizzle with maple syrup. Bake for 10 minutes or until kale is crispy, beans are tender and walnuts are toasted.

Meanwhile, to make the lemon dressing, whisk all of the ingredients together in a small jug. Season with pepper.

Step 4 of 4

Halve chicken diagonally and place on a serving tray with pumpkin, beans, kale and walnuts. Serve drizzled with lemon dressing.
