- 120grams Woolworths flaked almonds, finely chopped
- 1/2 cup panko breadcrumbs
- 1teaspoons paprika
- 1/4 cup plain flour
- 1 free range egg, lightly beaten
- 600grams chicken tenderloins
- 1/4 cup extra virgin olive oil
- 1tablespoons honey
- 2teaspoons Dijon mustard
- 1/2 cup mayonnaise
- 1 lemon, ½ juiced, ½ cut into wedges
- 500grams snap frozen spring greens mix
- 475grams Woolworths roasted garlic mash, heated, to serve
Description
Have golden crumbed chicken tenderloins with mash and veggies on the dinner table in 30 minutes. It's as easy as it gets.
Instruction tip
Tip:To cook chicken in the air fryer, coat in flour, egg and breadcrumb mixture as per recipe. Spray with olive oil cooking spray, then cook in an air fryer preheated to 180°C for 10 minutes, turning halfway through cooking, or until cooked through.
Method
Step 1 of 4
Combine almonds, breadcrumbs and paprika in a shallow bowl. Place flour on a plate. Combine egg and 1 tbs cold water in a second shallow bowl.

Coat chicken in flour, then egg and breadcrumb mixture. Heat oil in a large frying pan over medium heat. Cook chicken, in 2 batches, for 4 minutes on each side or until golden and cooked through. Cover to keep warm.

Meanwhile, combine honey, mustard, mayonnaise and lemon juice in a small bowl.
Step 4 of 4
Cook vegetables in a medium saucepan of boiling water for 4 minutes or until heated through. Drain. Serve chicken with vegetables, mash seasoned with pepper, dipping sauce and lemon wedges.
