- 8 Woolworths RSPCA-approved chicken drumsticks
- 6 cloves garlic, unpeeled, bruised
- 1tablespoons Italian dried herbs
- 1kilograms washed white potatoes, quartered
- 1/4 cup extra virgin olive oil
- 1 red capsicum, deseeded, thickly sliced
- 1 green capsicum, deseeded, thickly sliced
- 1 yellow capsicum, deseeded, thickly sliced
- 1 eggplant, trimmed, thickly sliced
- 280grams sweet berry truss tomatoes
- 1/2 bunch basil leaves
- 60grams baby rocket leaves
Description
Classic Italian flavours come together in this tantalising tray bake. The best bit? Your oven does most of the hard work.
Method
Step 1 of 3
Preheat oven to 230°C/ 210°C fan-forced. Line a large baking tray with baking paper.
Step 2 of 3
Place chicken, garlic, dried herbs, potato and 1 tbs of oil in tray and toss to coat. Spread chicken and vegetables out in a single layer. Bake for 30 minutes or until vegetables and chicken are light golden.
Step 3 of 3
Add capsicums, eggplant and tomatoes to dish. Drizzle with remaining oil. Bake for a further 20 minutes or until vegetables are tender and chicken is cooked through. Scatter over basil and serve with rocket.
