- 1tablespoons extra virgin olive oil
- 600grams chicken thigh fillets
- 1 cup salt-reduced chicken stock
- 2tablespoons Woolworths basil pesto
- 2 cloves garlic, crushed
- 1/4 cup light thickened cream
- 120grams baby spinach leaves
- 1 large tomato, finely chopped
- 475grams roasted garlic potato bake
- 2 basil sprigs
Description
Ready in just 3 steps, make this creamy pesto chicken with aromatic Italian flavours of tomato, basil and garlic for a deliciously easy dinner.
Method
Step 1 of 3
Heat oil in a large, deep frying pan over medium-high heat. Cook chicken for 8 minutes, turning, or until golden. Add stock,1/2 cup water, pesto and garlic, then bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 7 minutes or until chicken is cooked through and sauce has thickened slightly.
Step 2 of 3
Stir in cream. Add spinach and tomato, then cook for 2 minutes or until spinach has wilted. Season.
Step 3 of 3
Meanwhile, heat mash according to packet instructions. Scatter basil over chicken mixture and serve with mash.
