- 2.50kilograms Steggles Family Roast Chicken
- 1 tub Continental Superb Stock Pot - Chicken
- 3tablespoons olive oil
- 3tablespoons fresh lemon juice
- 4 cloves garlic, crushed
- 1tablespoons smoked paprika
- 1teaspoons oregano, dried
- 1teaspoons chilli flakes
- 500grams potatoes, peeled and cut into wedges (for roasting)
- 500grams orange sweet potato, peeled and cut into wedges
- 3 pinches sea salt (to taste )

Method
Step 1 of 4
Preheat oven to 190°C. Line a large baking tray with sides (or a large shallow baking dish) with foil.
Step 2 of 4
Remove plastic wrap from chicken. Pat dry with kitchen paper towel inside and out. Using kitchen shears, cut chicken down the backbone and remove backbone. Place chicken, skin side up on a chopping board. Place hand on the breastbone and press down hard to flatten chicken.
Step 3 of 4
Place 2 tablespoons oil, lemon juice and stockpot jelly into a heatproof bowl. Microwave, uncovered, on HIGH for 30 seconds, then stir until stock jelly dissolves. Add smoked paprika, oregano and chilli, mix well. Rub smoked paprika mixture over both sides of chicken. Place chicken, breast side up, onto prepared tray.
Step 4 of 4
Place potato wedges and sweet potato wedges in a large bowl. Pour over remaining 1 tablespoon oil. Season to taste with sea salt, toss to coat. Place potato wedges around chicken in baking tray. Roast in preheated oven for 1 hour 15 minutes until golden brown and chicken is cooked through. Cut chicken into pieces and drizzle with pan juices. Serve with potato wedges.
