  • 1kilograms sweet potato, cut into wedges
  • 1/4 cup extra virgin olive oil
  • 1 lemon, juiced
  • 300grams Woolworths fine cut coleslaw
  • 2 spring onions, thinly sliced
  • 6 bread rolls extra soft jumbo, split
  • 1/2 qty slow cooker honey mustard chicken, thawed overnight in fridge, if necessary, heated
  • 1/4 cup gherkin relish

Description

You won't want to order takeaway when you can whip up delicious homemade burgers with precooked slow cooker honey mustard chicken.

Method

Step 1 of 3

Preheat oven to 230°C/210°C fan-forced. Line a baking tray with baking paper. Place potato on tray and drizzle with half of the oil, then turn to coat. Bake for 30 minutes or until tender.

Step 2 of 3

Meanwhile, place lemon juice and remaining oil in a large bowl. Season with pepper and stir to combine. Add coleslaw and onion, then stir to combine.

Step 3 of 3

Top roll bases with coleslaw, chicken and relish. Sandwich with roll tops. Serve burgers with wedges.
