- 300grams penne
- 1tablespoons extra virgin olive oil
- 1 brown onion, finely chopped
- 1 punnet thyme, leaves picked
- 60grams baby spinach leaves
- 1 cup milk
- 1/2 cup cooking cream
- 1/2 qty slow cooker honey mustard chicken, thawed overnight in fridge, if necessaryingredient tip
- 1 1/3 cups shredded pizza cheese
- 1/4 bunch continental parsley, leaves picked, to serve
Description
This creamy chicken dish is hearty and rich, and ticks all the boxes when it comes to comfort food.
Method
Step 1 of 4
Cook pasta according to packet instructions. Drain.
Step 2 of 4
Meanwhile, grease an 8-cup baking dish. Heat oil in a large, deep frying pan over high heat. Cook onion and thyme for 3 minutes, stirring occasionally, or until onion has softened. Add spinach and cook for 1 minute or until wilted.
Step 3 of 4
Preheat grill to high. Combine milk, cream, chicken and half of the cheese with onion mixture. Bring to a boil. Remove pan from heat. Stir in pasta. Season.
Step 4 of 4
Transfer pasta mixture to dish. Sprinkle with remaining cheese. Grill for 4 minutes or until golden. Serve topped with parsley.
