  • 1 1/2tablespoons plain flour
  • 800grams white beans, drained
  • 2/3 cup frozen peas
  • steamed green beans, to serve
  • 2 brown onions, thinly sliced
  • 2tablespoons extra virgin olive oil
  • 2tablespoons tomato paste
  • 2tablespoons lemon juice
  • 2 cup beef stock
  • 4 garlic cloves, crushed
  • 1tablespoons mild curry powder
  • 8 thick beef sausages
  • 1/3 cup light thickened cream

Method

Step 1 of 4

Heat half the oil in a large, deep frying pan over medium-high heat. Cook sausages, turning, for 5 minutes or until browned. Transfer to a plate.

Step 2 of 4

Add onion and half the garlic to pan and cook, stirring, for 3 minutes or until softened. Add curry powder and flour, then cook for a further 1 minute or until fragrant. Add tomato paste and cook, stirring, for 1 minute or until fragrant.

Step 3 of 4

Return sausages to pan and add stock. Bring to the boil, then reduce heat to medium-low and simmer, uncovered, for 12 minutes or until sausages are cooked through and sauce has thickened. Stir in peas for the last 2 minutes of cooking time, then stir in cream and season.

Step 4 of 4

Meanwhile, heat beans, remaining garlic and 1/4 cup water in a medium frying pan over medium-high heat for 4 minutes or until heated through. Transfer mixture to a food processor. Add lemon juice and remaining oil, then process until smooth and combined. Season. Serve curried sausages with steamed green beans and bean mash.
