Beef and Bean Tacos

- 425grams can mexe beans, drained
- 190grams jumbo taco shells (10 pk)
- 30grams mexican taco spice mix
- sour cream
- 1 small onion, chopped
- 1/2 punnet cherry tomatoes
- 1/4 iceberg lettuce, shredded
- 2teaspoons olive oil
- 500grams beef mince
Method
Step 1 of 4
Heat oil in a frying pan and cook onion until soft. Add the mince, stirring with a wooden spoon to break up any lumps and cook for 5 minutes.
Step 2 of 4
Add taco spice mix and 3/4 cup of water. Simmer for 2 minutes or until sauce thickens.
Step 3 of 4
For crunchy taco shells – follow on pack instructions.
Step 4 of 4
Build your own tacos with beef, lettuce, cherry tomatoes and beans. Top with a dollop of sour cream.
