- 1teaspoons Mexican chilli powder
- 1/4 cup coriander
- 1 brown onion
- 2 spring onions
- 1/2 cup light sour cream
- 1tablespoons lime juice
- 1 1/2tablespoons olive oil
- 420grams no added salt red kidney beans, rinsed
- 250grams microwave brown rice
- 200grams mild taco sauce
- 2 Roma tomatoes
- 3/4 cup grated reduced-fat tasty cheese
- 6 tortillas
- 250grams slow cooked pulled BBQ beef
- 2 cloves garlic, crushed

Method
Step 1 of 4
Heat 1 tbs oil in a large saucepan over medium-high heat. Add brown onion and garlic and cook for 4 minutes, stirring, or until softened. Add beans and chilli powder and cook for 1 minute, stirring, or until fragrant.
Step 2 of 4
Add beef, sauce and 1/4 cup water. Bring to the boil. Reduce heat to low and simmer for 5 minutes or until mixture thickens and is heated through. Remove from heat.
Step 3 of 4
Meanwhile, combine spring onion, tomato, coriander, lime juice and remaining oil in a bowl. Season. Prepare rice and tortillas following packet instructions.
Step 4 of 4
Spread tortillas with sour cream then evenly divide rice, cheese, beef and tomato mixtures among tortillas. Roll up tightly to enclose filling and serve.
