Museli bars
  • 1/3 cup Woolworths wholemeal self raising flour
  • 1tablespoons sesame seeds
  • 2tablespoons Woolworths pure honey
  • 1 1/2 cup rolled oats
  • 2tablespoons sunflower oil
  • 1 Woolworths free range egg, lightly beaten
  • 1/3 cup sultanas
Snack
  • 2 Vita-Wheat 9 grains
  • 1 small tomato, sliced
  • 30grams tasty cheese, sliced
  • 1 rye mountain bread
  • 1/2 small carrot, grated
  • 1/4 small Lebanese cucumber, thinly sliced
  • 4 strawberries
  • 1tablespoons Woolworths ricotta
  • 20grams salt reduced leg ham, shaved

Method

Step 1 of 3

Spread bread with ricotta and top with ham, carrot and cucumber. Roll and slice to form 6 pinwheels. Pierce each pinwheel with a lollipop stick to secure. Serve with strawberries.

Snack 1: Top crackers with cheese and tomato. Pack in an airtight container.

Snack 2: To make muesli bars, preheat oven 180°C/160°C fan-forced. Grease and line a 20cm square baking pan with baking paper, allowing paper to overhang on 2 opposite sides. Combine oats, flour, sultanas, sesame seeds and egg in a large bowl. Place oil and honey in a small saucepan over low heat and stir until well combined and smooth. Simmer for 1 minute. Add honey mixture to oats mixture and stir until well combined. Press mixture firmly into prepared pan and smooth surface with the back of a spoon. Bake for 20 minutes or until a deep golden colour. Allow to cool completely in pan. Remove from pan and cut into 16 bars. Place 1 muesli bar in lunch box. Store remaining bars in an airtight container in the fridge.
