  • 1/4 cup sultanas (for oat & honey cookies)
  • 1 red apple
  • 1/4 red capsicum, thinly sliced (for cannellini bean wrap)
  • 1/2 cup cannellini beans (for cannellini bean wrap)
  • 40grams cheese block, sliced (for crackers & cheese snack)
  • 1/4 cup honey (for oat & honey cookies)
  • 1 cup oats (for oat & honey cookies)
  • 10grams baby spinach leaves (for cannellini bean wrap)
  • 1 wholegrain wrap (for cannellini bean wrap)
  • 1 large free range egg (for oat & honey cookies)
  • 1tablespoons avocado (for cannellini bean wrap)
  • 6 brown rice crackers no salt (for crackers & cheese snack)

Method

Step 1 of 6

Cannellini bean wrap. Mash beans with avocado and spread over wrap. Top with baby spinach leaves and capsicum. Roll to enclose.

Step 2 of 6

Part 2: Oat & honey cookies. Preheat oven to 180ºC. Line a baking tray with baking paper. Place oats in a food processor and process until finely chopped, keeping a little texture.

Step 3 of 6

Whisk the egg and honey in a medium bowl. Stir in oats and sultanas until well combined.

Step 4 of 6

Roll rounded tablespoons of the mixture into 12 balls and place on prepared tray. Using a fork, flatten slightly. Bake for 10-12 minutes or until golden and crisp. Set aside to cool completely.

Wrap 2 cookies in plastic wrap and place in lunch box.

Step 6 of 6

Store leftover cookies in an airtight container for up to 3 days. To freeze, wrap individually in plastic wrap and freeze for up to 1 month. Crackers and cheese snack: Pack separately in lunch box.
