- 20grams tasty cheese, shredded
- 2tablespoons cottage cheese (for snack)

Method
Step 1 of 4
Lunch: Preheat grill on high. Place spinach in a small heatproof bowl. Pour over enough boiling water to cover. Set aside for 10 seconds, then refresh under cold running water. Drain. Squeeze out excess water with hands, then roughly chop.
Step 2 of 4
Combine chopped spinach, ricotta and cheese in a small bowl. Spread spinach mixture evenly over 2 muffin halves. Place under grill and grill for 2-3 minutes or until golden and bubbling. Set aside to cool completely.
Step 3 of 4
Snack 1: Spread ham with hummus. Top with carrot and roll to enclose. Secure with a toothpick.
Step 4 of 4
Snack 2: Corn thins topped with cheese.
