  • 1 Lebanese cucumber, cut into stick (for snack)
  • 3 cherry tomatoes (for snack)
  • 2 multigrain ryvitas (for snack)
  • 2 wholegrain mini tortilla
  • 40grams cheese, cut into cubes (for snack)
  • 1/2teaspoons paprika
  • 2teaspoons Greek style yoghurt (for snack)
  • 2 eggs, hard-boiled (for snack)
  • 2tablespoons mild tomato salsa (to serve)
  • 2tablespoons parmesan cheese, finely grated

Method

Step 1 of 2

Preheat oven to 180ºC (160ºC fan-forced). Line a baking tray with baking paper. Using a 10cm heart cookie cutter, cut hearts from tortillas. Place hearts on prepared tray.

Step 2 of 2

Combine parmesan and paprika in a small bowl. Spray hearts lightly with oil, and then sprinkle with the parmesan mixture. Bake for 6-8 minutes or until golden. Set aside to cool completely. Store in an airtight container. Serve with salsa. Snack 1: Mash eggs with yoghurt. Top crispbread with cucumber and the egg mixture. Snack 2: Tomatoes and cheese.
