  • 2 slices chicken breast (for snack)
  • 1 cup seedless watermelon, diced (for snack)
  • 1/4 red capsicum, deseeded, sliced (for snack )
  • 1 carrot, grated (for rice & bean salad)
  • 4 snow peas, shredded (for snack)
  • 1 pinch ground cinnamon (for snack)
  • 2teaspoons white balsamic vinegar
  • 150grams Greek style yoghurt (for cinnamon yoghurt)
  • 1/3 cup tasty cheese, grated
  • 420grams mexican style 3 bean mix (for rice & bean salad)
  • 1/2 cup brown rice (for rice & bean salad)

Method

Step 1 of 5

Cook rice in a saucepan of boiling water following packet instructions. Refresh under cold running water. Drain.

Step 2 of 5

Combine rice, bean mix, carrot, cheese and vinegar in a bowl. Serves 2. Pack salad in an airtight container and refrigerate until required.

Step 3 of 5

Snack 1: Top each chicken slice with capsicum and snow peas. Roll up. Place in an airtight container.

Step 4 of 5

Snack 2: Sprinkle cinnamon over yoghurt. Place in an airtight container.

Step 5 of 5

Snack 3: Place watermelon in airtight container.
