  • 1 1/2 cup chicken breast (cooked )
  • 2 cup fine cut coleslaw
  • 250grams microwave brown rice & quinoa mix

Method

Step 1 of 4

Heat Brown Rice & Quinoa mix as per packet instructions.

Step 2 of 4

Trim lettuce leaves to cups. Blanch snow peas in boiling water, drain and slice.

Step 3 of 4

Combine chicken breast, coleslaw, celery and snow peas in a bowl and toss to combine.

Step 4 of 4

Spoon chicken and rice mix into lettuce cups.
