  • 1 carrot
  • 1 Lebanese cucumber
  • 4 cherry tomatoes (to serve)
  • 50grams snow peas, steamed (to serve)
  • 3tablespoons soft cream cheese
  • 2teaspoons corn relish
  • 2 slice round ham

Method

Step 1 of 5

Mix cream cheese with relish.

Step 2 of 5

Place ham on a clean work surface, spread with cream cheese mixture.

Step 3 of 5

Using a vegetable peeler, make long thin ribbons of carrot and cucumber.

Step 4 of 5

Place 4-5 slices of carrot and cucumber on one half of the ham. Roll up firmly and seal with a little extra cream cheese mixture, if necessary.

Step 5 of 5

Cut roll-ups into 5-6 pieces and pack with blanched snow peas and cherry tomatoes in a lunch box with a freezer pack to keep cool.
