Method
Step 1 of 2
Cut cucumbers in half lengthways. Use a teaspoon to remove the seeds. Shred ham and fill base half of each cucumber.
Step 2 of 2
Cut cheese into strips and place on ham. Cut carrot into matchsticks. Place carrot in top half of each cucumber. Sandwich cucumber base and tops together, then cut each in half to serve.
