  • 1/2 lemon, finely grated zest
  • 1 pinch salt
  • 4 slices soft brown bread
  • 1 pinch freshly ground black pepper
  • 100grams soft goat's cheese, softened
  • 100grams cream cheese
  • 1tablespoons leaves, finely chopped
  • 1tablespoons chives, finely chopped
  • 25grams butter, softened (for spreading)

Description

These little sandwich bites make a very appealing addition to a picnic spread.

Method

Step 1 of 3

Put the 2 cheeses in a large bowl with the herbs and lemon zest and beat with a wooden spoon until combined. Season well with pepper and a little salt (be careful as goat’s cheese can be quite salty).

Step 2 of 3

Trim the crusts off the bread and roll each slice out with a rolling pin until it is as flat as possible. Spread each slice with butter on one side only.

Step 3 of 3

Spread each slice of bread with one-quarter of the cheese mixture and roll it up, starting from a short edge. Trim the edges neatly with a serrated knife and cut each roll in half, then in half again, to make 4 pieces per sandwich. Serve cut-sides up to show the swirled effect, or pack into a container for transportation.
