- 1 pinch sea salt
- 8 slices white bread
- 1 cucumber
- 20 mint leaves
- 20grams softened butter
Method
Step 1 of 2
Spread 8 slices of medium sliced white bread with softened butter. Thinly slice 1 cucumber, place in a colander, and lightly scatter over sea salt, then leave for 2 hours. Gently pat off the salt and pat dry with kitchen paper.
Step 2 of 2
Evenly distribute the cucumber over 4 slices and scatter over 20 mint leaves and black pepper. Top with the remaining 4 slices. Cut off the crusts using a serrated knife and discard. Cut into 6 mini sandwiches to serve.
