  • 25grams softened butter (for spreading on the bread)
  • 1 avocado, ripe (diced)
  • 1teaspoons black pepper
  • 3tablespoons mayonnaise
  • 200grams small prawns
  • 100grams bacon, cooked and diced

Method

Step 1 of 2

Spread 8 slices of medium sliced granary bread with softened butter. Mix 1 diced ripe avocado with 1 tbs lemon juice, salt and black pepper, 3 tbs mayonnaise, 200g small prawns, and 100g cooked diced bacon.

Step 2 of 2

Spread the mixture evenly over 4 slices of bread and top with the remaining 4 slices. Cut off the crusts using a serrated knife and discard. Cut into 6 mini sandwiches to serve.
