  • 2 red capsicums, seeded and quartered
  • 150grams goat’s cheese
  • 1 lemon, grated zest
  • 1 pinch black pepper
  • 15grams chervil, chopped
  • 1teaspoons creamed horseradish
  • 3 tortillas
  • 115grams smoked salmon

Preheat grill. Grill 2 seeded and quartered red capsicums, skin side up, for 7 minutes, or until blackened. Place in a plastic bag to cool, remove the charred skin, and slice into strips. Combine 150g goat’s cheese or cream cheese, grated zest of 1 lemon, black pepper, 15g chopped chervil, and 1 tsp creamed horseradish. Warm through 3 tortillas, one at a time. Spread with the cream and scatter with the pepper and 115g smoked salmon. Roll up, wrap, and chill. Cut on an angle to serve.
