  • 32 raw king prawns, shelled and deveined

Description

Grill these sweet, sour, spicy skewers and serve as a real treat of a starter, or as part of a larger Asian feast.

Method

Step 1 of 3

Before you start, soak the bamboo skewers in water for at least 30 minutes. This will help stop them burning when you grill the prawns.

Step 2 of 3

Meanwhile, in a small saucepan, mix together all the ingredients except the prawns. Bring them to the boil, then reduce the heat to a low simmer and cook, uncovered, for 7-10 minutes, until the sauce has thickened to a sweet, sticky syrup. Set it aside to cool (it will thicken further as it cools).

Preheat the grill on its highest setting. Thread 4 prawns on to each skewer. Brush both sides of the prawns with the syrup and place them on a baking tray or grill pan that has been lined with foil. Grill the skewers for 2-3 minutes on each side, brushing once more with syrup as you turn them.
