- 40 cooked tiger prawns, peeled, deveined
- 1/4 small red cabbage, shredded
- 1/2 cup snow pea sprouts, trimmed
- 1 small carrot, peeled, cut into matchsticks
- 1/3 cup coriander leaves
- 2 spring onions, thinly sliced diagonally
- 2packets crusty baguette halves
- 1/4 small Chinese cabbage, shredded
- 1 lime, juiced
- 1/4 cup sweet chilli sauce
- 1/2 cup Greek yoghurt
- 1/2 cup mayonnaise
- 1tablespoons sesame seeds, toasted
Method
Step 1 of 3
Combine cabbage, carrot, onion, sprouts, sesame seeds and coriander in a bowl. Whisk yoghurt, mayonnaise, sauce and lime juice together in a bowl. Reserve 1/3 cup yoghurt dressing and pour the remaining over the cabbage mixture. Season with salt and pepper. Toss to combine.
Step 2 of 3
Trim ends from baguettes and discard. Cut baguettes in half crossways, then cut them in half lengthways down the centre, but not all the way through.
Step 3 of 3
Spread baguettes with reserved dressing, fill with coleslaw and prawns. Serve immediately.
