Crumbed Fish Bites

- 1tablespoons hot english mustard
- 1/3 cup plain flour
- 500grams fish fillets (salmon or ling)
- 2tablespoons flat-leaf parsley, chopped (& extra to serve)
- 4 spring onions, chopped
- whole-egg mayonnaise (to serve)
- 1 egg yolk (& 1 egg whisked)
- 1 cup panko breadcrumbs
- vegetable oil (to fry)
- 1 cup mashed potato, chilled
Method
Step 1 of 3
Process fish in a food processor until a paste forms. Transfer to a bowl and combine with potato, onion, parsley, mustard and egg yolk. Season to taste.
Step 2 of 3
Shape tablespoonfuls of fish mixture into balls. Coat each fish ball in flour, egg and breadcrumbs. Place on a plate.
Step 3 of 3
Heat oil in a saucepan over medium-high heat. Gently drop balls into oil, in batches, and cook for 1-2 minutes or until golden. Serve with mayonnaise and garnish with parsley.
