  • 12 medium field mushrooms
  • 3tablespoons olive oil
  • 3tablespoons fresh breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 fresh red chilli, deseeded and finely chopped
  • 1 handful fresh flat-leaf parsley, chopped
  • 150grams minced pork
  • 3 fresh tomatoes, finely chopped

Method

Step 1 of 3

Remove the stalks from the mushrooms and discard, then brush the mushrooms with the oil.

Step 2 of 3

Put the rest of the ingredients in a mixing bowl and combine well with your hands to form a rough paste. Stuff the cup of each mushroom with a 1cm ( 1/2 in) layer of the paste.

Step 3 of 3

Grill the mushrooms under a medium grill for 12-15 minutes, or until golden brown and the mince is cooked. Serve with a drizzle of olive oil and some fresh crusty bread.
