- 1 Lebanese cucumber, cut into long ribbons
- 105grams salmon, canned in water, drained & flaked
- 1/2teaspoons lemon, zest finely grated
- 60grams cream cheese
- 1teaspoons freshly ground black pepper
- 25grams baby spinach
- 4 slice bread
- 1teaspoons dill, leaves finely chopped

Method
Step 1 of 4
Place cream cheese, dill and lemon zest in a small bowl. Season with freshly ground black pepper and mix until well combined.
Step 2 of 4
Place two slices of bread on a board. Spread cream cheese mixture evenly over bread.
Step 3 of 4
Top with spinach, cucumber and salmon. Place remaining bread on top. Cut in half to serve. TIPS: Try using any fresh herbs you have in place of the dill and the lemon zest with lime or orange zest.

Use a vegetable peeler to cut cucumber into ribbons.
