- 1 clove garlic, chopped
- 2 avocados
- 1/2 bunch mint, leaves picked
- 4 chicken breast fillets (see tip)
- 5milliliter virgin olive oil spray
- 2tablespoons lemon juice
- 8 slice sourdough bread
- 60grams baby rocket leaves
- 70grams feta, crumbled
- 1/4 cup olive oil
- 1tablespoons pine nuts
- 2 punnet berry truss tomatoes

Method
Step 1 of 4
Process mint, garlic and pine nuts in a food processor until finely chopped. With the motor running, gradually add 2 tbs of the oil and 1 tbs of water in a thin, steady stream until well combined and a smooth paste forms. Add feta and pulse until just combined. Season with pepper.

Preheat grill to high. Place bread and tomatoes on a foil-lined tray. Spray with oil. Toast bread turning once, until golden, and tomatoes have softened.

Meanwhile, cut each chicken breast horizontally into 2 thin fillets. Heat remaining oil in a large frying pan over high heat. Cook chicken for 3-4 minutes on each side or until golden and cooked through. Slice.
Step 4 of 4
Scoop avocado flesh into a bowl. Using a fork, roughly mash. Stir in lemon juice and season to taste. Top toast with avocado, rocket, chicken, pesto and tomato. Serve.
