- 1 sprig rosemary
- 1/4 cup red wine vinegar
- 1 lemon, rind cut into strips
- 250grams green olives, drained and rinsed
- 250grams black olives, drained and rinsed
- 1 cup olive oil
- 2 cloves garlic

Place olives into a clean dry jar with remaining ingredients except oil. Heat oil in a small saucepan over medium heat until just warm. Pour over olives, cover and leave to infuse the flavours for 1 week.
