  • 18 slice roast turkey breast
  • 1 beetroot, sliced
  • 1 sweet potato, sliced
  • 1 pumpkin, sliced
  • 60grams cranberry sauce (to serve)
  • 1/2teaspoons dried mixed herbs
  • 5milliliter canola cooking spray
  • 1 potato, sliced
  • 50grams dried apple and sutanas
  • 1tablespoons water, boiling
  • 1 egg, beaten
  • 2 cup brown rice, cooked

Method

Step 1 of 7

Pour 1 tablespoon boiling water over apple and sultanas and soak for 5 minutes until softened. Drain off excess water. Stir in brown rice, herbs and egg.

Step 2 of 7

Lay 2 slices of turkey into each hole of the muffin pan. Divide rice mixture evenly between each. Cover with another slice of turkey.

Preheat oven to 200°C.

Line a baking tray with baking paper.

Step 5 of 7

Peel vegetables and cut into 5mm thick slices. Using a star shaped cutter, cut shapes from the vegetable slices and lay onto the tray. Spray with oil spray.

Step 6 of 7

Bake turkey roasts and vegetables for 15 minutes until tender and golden.

Step 7 of 7

Serve with cranberry sauce.
