Mini Turkey Roast & Vegetable Stars

- 18 slice roast turkey breast
- 1 beetroot, sliced
- 1 sweet potato, sliced
- 1 pumpkin, sliced
- 60grams cranberry sauce (to serve)
- 1/2teaspoons dried mixed herbs
- 5milliliter canola cooking spray
- 1 potato, sliced
- 50grams dried apple and sutanas
- 1tablespoons water, boiling
- 1 egg, beaten
- 2 cup brown rice, cooked
Method
Step 1 of 7
Pour 1 tablespoon boiling water over apple and sultanas and soak for 5 minutes until softened. Drain off excess water. Stir in brown rice, herbs and egg.

Lay 2 slices of turkey into each hole of the muffin pan. Divide rice mixture evenly between each. Cover with another slice of turkey.

Preheat oven to 200°C.

Line a baking tray with baking paper.
Step 5 of 7
Peel vegetables and cut into 5mm thick slices. Using a star shaped cutter, cut shapes from the vegetable slices and lay onto the tray. Spray with oil spray.

Bake turkey roasts and vegetables for 15 minutes until tender and golden.
Step 7 of 7
Serve with cranberry sauce.
