- 1 medium banana, mashed
- 30grams red capsicum
- 1/2 small carrot, grated
- 10grams butter lettuce leaves
- 3 strawberries
- 1teaspoons honey
- 5tablespoons ricotta
- 20grams reduced fat tasty cheese
- 2/3 cup self-raising wholemeal flour
- 1 soft wholegrain wrap
- 2 free range eggs, 1 egg boiled and peeled for lunch + 1 egg for snack 1
- 1tablespoons plain yoghurt
- 1teaspoons pepitas
- 1/2 stick celery

Method
Step 1 of 3
Lunch: To make egg, pepita, butter lettuce & carrot wrap, mash egg with yoghurt and pepitas. Spread mix over wrap. Top with lettuce leaves and carrot. Roll to enclose. Pack into box with a few strawberries.

Snack 1: To make banana pikelets, sift flour into a large bowl. Whisk the milk and egg together in a jug. Slowly whisk the egg mixture into the flour until well combined and smooth. Add the mashed banana and honey and stir until well combined. Lightly spray a large non-stick frying pan with oil. Place over medium heat. Cooking in batches of 4 pikelets at a time, place tablespoons of mixture in pan. Cook for 1-2 minutes or until bubbles appear on the surface. Turn and cook for 1 minute or until golden. Repeat to make 10 pikelets. Add ricotta to a snap-lock bag, snip end and pipe web onto pikelet. Pack 2 pikelets into box. Makes 10 (2 per serve).

Snack 2: To make veggie & cheese sticks, cut celery, capsicum and cheese into sticks.
