  • 1tablespoons tomato paste no added salt (for pizza)
  • 1/4 green capsicum, deseeded, diced (for pizza)
  • 1/4 carrot, cut into sticks (for snack)
  • 40grams snow peas, trimmed (for snack)
  • 1 Lebanese bread (for pizza)
  • 150grams Greek style yoghurt (for snack)
  • 1 nectarine (for snack)
  • 1/4 cup cheese, grated (for pizza)
  • 2teaspoons sultanas, for snack
  • 40grams boneless leg ham, shaved, sliced (for pizza)

Method

Step 1 of 3

Pizza Triangles: Preheat oven to 220°C. Line a baking tray with baking paper.

Step 2 of 3

Place pita on prepared tray and spread evenly with tomato paste. Top with ham, capsicum and cheese.

Step 3 of 3

Bake for 8-10 minutes or until golden and crisp. Set aside to cool completely. Cut into triangles and keep covered in fridge until ready to use. Wrap half the pizza triangles in plastic wrap or place in a small airtight container. Pack next to frozen drink or cool brick in lunch box to keep cool. Snack: 150g Greek-style yoghurt topped with 2 tsp sultanas.
