  • 1/2 avocado
  • 1 carrot
  • 1 Lebanese cucumber
  • 1tablespoons lemon juice
  • 1 vanilla yoghurt
  • fresh fruit
  • 1 stick celery
  • 1 cup cooked chicken, shredded
  • 30grams tasty cheese & crackers

Method

Step 1 of 2

Slice carrot, celery and cucumber into thin matchsticks. Deseed avocado and scoop flesh into a bowl. Add lemon juice and roughly mash. Season with salt and pepper.

Step 2 of 2

Put veggie sticks in a lunch box. Place avocado mixture and chicken into 2 sealable containers and place in the lunch box together with sliced cheese and crackers. Add vanilla yoghurt and fruit of your choice.
