Star Lord Lunch
11 Ingredients
- 1/3 Lebanese cucumber, cut into batons
- 300grams sweet potato, peeled, chopped
- 20grams reduced-fat feta, crumbled
- 2tablespoons sunflower seeds
- 1 wholemeal wrap
- 120grams plain yoghurt (save 20g for snack 2)
- 1teaspoons pepitas
- 1teaspoons sultanas
- 2/3 cup brown rice, cooked
- 1/2 cup red grapes
- 95grams can tuna in springwater, drained and flaked

Snack 1: To make sweet potato, brown rice & feta space balls, Preheat oven to 180ºC. Line a baking tray with baking paper. Place sweet potato and 1 tbs water in a microwave-safe dish. Cover and microwave on high for 3-4 minutes or until tender. Cool. Place sweet potato in a bowl and mash until smooth. Add rice, sunflower seeds and feta and stir to combine. Roll tablespoons of mixture into 12 balls and place on prepared tray. Spray lightly with oil and bake, turning halfway through cooking time, for 15 minutes or until golden. Cool completely. Place in an airtight container in fridge until ready to pack in lunch box. Serves 4 (makes 12) 3. Snack 2: To make fruit & seed yoghurt, top yoghurt with pepitas and sultanas.
