Method

Step 1 of 3

Lunch: To make chicken & couscous salad, combine couscous, chicken, carrot, tomato and parsley. Toss with lemon juice and olive oil. Serve with corn cob.

Step 2 of 3

Snack 1: To make melon fruit hammers with honey ricotta, cut honeydew melon into eight 1cm cubes. Cut watermelon into two 2cm x 4cm rectangles. Thread honeydew melon onto 2 short wooden skewers. Top with a watermelon rectangle. Combine ricotta and honey in a small bowl. Serve with fruit hammers.

Snack 2: To make crackers and cheese: pack separately to prevent from going soggy and assemble at school.
