Method

Step 1 of 5

Ricotta & veggie sandwich: Place the bread on a clean work surface. Combine ricotta, carrot and capsicum in a small bowl. Spread mixture evenly over one slice of bread.

Top with remaining slice of bread and cut off crusts. Cut into triangles or finger sandwiches.

Pack in an airtight container next to frozen drink or cool brick in lunch box to keep cool.
