  • 200grams sweet potato, peeled, cut into thick chips
  • 1/2 cup lettuce, shredded
  • 60grams lean chicken breast, cooked, diced
  • 1/2teaspoons paprika
  • 2tablespoons tzatziki (to serve)
  • 2teaspoons Greek style yoghurt
  • 8 brown no added salt rice crackers (for snack)
  • 2teaspoons mayonnaise 97% fat free
  • 1tablespoons lite hommus, for snack
  • 1/2 pita bread wholemeal

Method

Step 1 of 3

Lunch: Combine chicken, apple, yoghurt and mayonnaise. Stuff chicken mixture into pita pocket with lettuce.

Step 2 of 3

Snack 1: 1. Preheat oven to 200ºC (180ºC fan-forced). Line a baking tray with baking paper. Place sweet potato on prepared tray, spray lightly with oil and sprinkle with paprika. Roast for 25 minutes or until golden and tender. Set aside to cool. Serve sweet potato chips with tzatziki to dip.
