  • 1 medium carrot
  • 1 medium cucumber
  • 2teaspoons lemon (juiced)
  • 150grams fine cut slaw
  • 1/2 cup microwave brown rice
  • 1tablespoons low fat mayonnaise

Method

Step 1 of 3

Heat microwave brown rice as per packet instructions. Stir in mayonnaise and lemon juice.

Step 2 of 3

Shave 12 long, thin ribbons from carrot and cucumber.

Step 3 of 3

Overlap 2 strips of carrot, and top one end with 1 tbs each rice and fine cut slaw. Roll up. Repeat with remaining strips, rice and slaw.
