  • tartare sauce, to serve
  • 1/2 cup frozen peas, thawed
  • 300grams fresh salmon, chopped
  • 100grams broccoli, chopped into small florets
  • 2tablespoons continental parsley
  • 500grams sweet potatoes, cut into 3cm cubes
  • lettuce leaves, to serve
  • 2tablespoons Macro organic plain flour
  • tomato sauce, to serve
  • 1/2 lemon, zested
  • lemon wedges, to serve
  • 1 free range egg, whisked
  • 2tablespoons vegetable oil

Description

These bite-sized fish and veggie patties deliver on flavour and texture thanks to fresh salmon, peas and mashed sweet potato. Plus, they’re freezer-friendly.

Method

Step 1 of 6

Place sweet potato into a saucepan and cover with cold water. Bring to the boil over high heat, and cook for 15 minutes or until just tender. Transfer to a bowl and roughly mash.

Step 2 of 6

Place same saucepan over high heat, add broccoli and cook for 2 minutes. Drain.

Step 3 of 6

Add broccoli, peas, salmon, zest, parsley, egg and flour to sweet potato. Stir to combine. Chill, covered, until ready to use.

Step 4 of 6

Heat oil in a frying pan over medium-high heat. Add spoonfuls of mixture to pan and cook, in batches, for 2-3 minutes on each side or until golden. Drain. Serve with lettuce, lemon wedges and sauces.

Step 5 of 6

To freeze uncooked mixture, place into a snap-lock bag and flatten. Seal, label and freeze for 2 months. To freeze cooked bites, cool and freeze on a flat tray until firm. Transfer to containers.

Step 6 of 6

To reheat cooked bites, microwave for 3 minutes or until heated through.
