- 140grams salted butter, chopped (save 40g softened butter, to serve)
- 50grams parmesan, finely grated
- 2 zucchini, finely grated
- 3/4 cup milk, save 1 tbs to brush
- 2tablespoons golden syrup

Description
You don't need to go camping to learn how to make delicious damper bread. Try this damper recipe, with a tasty cheese and zucchini twist, at home today.
Method
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
Step 2 of 4
Place flour, butter and parmesan in a large bowl. Using fingertips, rub ingredients together until mixture resembles coarse breadcrumbs. Season.
Step 3 of 4
Add zucchini and toss to combine. Add milk and, using a flat-bladed knife, stir until mixture comes together. Turn mixture onto a floured surface and knead lightly until a dough forms. Shape dough into a ball. Transfer to tray and flatten slightly to form a 20cm round. Score dough into 8 wedges with a small, sharp knife and brush with milk.
Step 4 of 4
Bake for 40 minutes or until golden and sounds hollow when tapped. Serve with softened butter and golden syrup.
