- 4 zucchini, cut into 5mm-thick slices
- 1/4 cup extra virgin olive oil
- 1/4 punnet thyme
- 1/2teaspoons Woolworths dried chilli flakes
- 120grams Greek-style feta
- 1/2teaspoons dried oregano
- 1 lemon
Description
This baked zucchini dish topped with feta, thyme and chilli is the perfect side. Better still, serve with toasted sourdough for an easy brunch idea.

Method
Step 1 of 2
Preheat oven to 220°C/200°C fan-forced. Place zucchini, 2 tbs oil, thyme and chilli in a baking tray with sides. Toss to coat. Place feta in centre of tray and arrange zucchini mixture around feta.
Step 2 of 2
Drizzle remaining oil over feta and sprinkle with oregano. Season with pepper. Bake for 15 minutes or until zucchini is tender and feta is warmed through. Squeeze over lemon juice and serve.
