  • 1tablespoons extra virgin olive oil
  • 400grams zucchini, coarsely grated
  • 2 cloves garlic, crushed
  • 1teaspoons ground cumin
  • 2 spring onions, thinly sliced
  • 50grams Greek-style feta, crumbled
  • 1/3 cup shredded mozzarella
  • 5milliliter Woolworths olive oil cooking spray
  • 4 sheets filo pastry
  • 1 lemon, cut into wedges

Description

If you're a fan of gozleme, you're going to be hooked on these flaky pastry parcels filled with zucchini, feta, mozzarella, garlic and fragrant cumin

Keep gozleme warm in the oven while cooking the second batch.

Method

Step 1 of 3

Heat oil in a large frying pan over high heat. Add zucchini, garlic, cumin and onion, then cook for 10 minutes, stirring occasionally, or until excess moisture from zucchini has evaporated. Transfer to a large bowl. Stir in feta and mozzarella.

Step 2 of 3

Spray 1 pastry sheet with oil. Bring short ends together to form a rectangle. Spray with oil. Place one-quarter of the zucchini mixture in centre of rectangle and spread mixture to form a 12cm square. Fold in sides to enclose filling. Repeat with remaining pastry sheets, oil and zucchini mixture.

Step 3 of 3

Spray same cleaned frying pan with oil and heat over medium heat. Cook gozleme, in 2 batches, for 3 minutes on each side or until golden and heated through. Cut each gozleme in half. Serve with lemon wedges.
