  • 1tablespoons finely chopped coriander leaves
  • 1teaspoons extra virgin olive oil

Who knew you could make cheesy crackers with avocado? These crispy bites served with Mexican salsa are perfect for your next get-together.

Method

Step 1 of 4

Preheat oven to 190°C/170°C fan-forced. Line 2 large baking trays with baking paper. Trace 12 x 7cm circles, 2cm apart, onto each sheet of baking paper, then place marked-sides down.

Scoop out flesh from 1 avocado and place in a bowl. Mash until smooth. Add garlic powder, cayenne pepper, parmesan and 1 tsp lemon juice. Season and mix until well combined. Spoon 1 tsp avocado mixture into centre of each circle. Using the back of a spoon, spread out evenly to fill circle (see Tip). Bake for 10 minutes or until firm. Turn crackers over and bake for a further 2 minutes or until golden. Remove trays from oven and allow crackers to cool completely and crisp up on trays.

Meanwhile, combine onion, coriander, oil and remaining lemon juice in a small bowl. Season. Set aside for 5 minutes.

Step 4 of 4

Slice remaining avocado. Top crackers with avocado slices and salsa. Serve immediately.
