  • 1 avocado
  • 1tablespoons coriander, finely chopped
  • 2 sweet potatoes, cut into wedges
  • 1tablespoons polenta
  • 1/2 lime juiced
  • 2teaspoons extra-virgin olive oil
  • 1teaspoons garlic powder
  • 1teaspoons smoked paprika
  • 1/4 cup Greek yoghurt

Method

Step 1 of 4

Preheat oven to 190°C fan-forced.

Step 2 of 4

Place sweet potato, olive oil, polenta, paprika, garlic powder, salt and pepper in a mixing bowl and stir to combine.

Step 3 of 4

Spread out in a single layer on a baking tray and bake for 40 minutes or until cooked through and golden.

Step 4 of 4

Meanwhile, place remaining ingredients in a bowl and mash with a fork to combine. Transfer to a small dip bowl and serve with baked sweet potato chips.
