  • 2tablespoons margarine
  • 1/2 cup plain flour
  • 1/2 cup self-raising flour
  • 1teaspoons mixed spice
  • 1 1/2tablespoons milk
  • 1/4 cup milk
  • 2 1/2 cup icing sugar
  • 1/4teaspoons cream of tartar
  • 90grams butter, softened
  • 1/2teaspoons ground cinnamon
  • 1/2teaspoons ground nutmeg
  • 1/4teaspoons bicarbonate of soda
  • 2tablespoons golden syrup
  • 1 egg
  • 1/2 cup brown sugar, firmly packed

Method

Step 1 of 6

Preheat oven to 180°C. Line a 12 hole cupcake pan with cupcake paper cases.

Step 2 of 6

Beat the butter, brown sugar and egg with an electric mixer until pale and thickened.

Step 3 of 6

Sift the dry ingredients into the mix, and then add the milk and golden syrup. Mix on medium speed until mixture is smooth. Evenly divide mixture between cupcake cases

Bake for 25 minutes or until cooked. Cool cakes on a wire rack.

To make the icing, sift the icing sugar into a bowl. Add the milk and margarine, and beat with an electric mixer until mixture is smooth.

Step 6 of 6

Ice the cakes and decorate with Christmas decorations.
