- 30grams plain flour
- 2tablespoons brandy
- 500milliliter thickened cream
- 1tablespoons icing sugar (to serve)
- 20grams butter, soft
- 600grams cherries, pitted, halved
- 4 eggs
- 6 egg yolks
- 2tablespoons brown sugar
- 200grams caster sugar
- 100grams almond meal

Step 1 of 3
Place the almond meal, flour, sugar and 1/4 tsp salt into a food processor, blitz for 30 seconds or until combined. Add eggs, yolks and cream, blitz again for 30 seconds or until a smooth batter forms. Transfer to a bowl or jug, cover and place in fridge to rest for at least 1 hour (see tip).

Preheat oven to 180°C. Grease an 8-cup capacity ovenproof dish with softened butter. Scatter 2/3 of the cherries over the base of the dish. Stir the batter, and then pour over the fruit. Bake for 40-45 minutes or until risen, golden brown and set. Meanwhile, combine remaining cherries, brown sugar and brandy in a bowl and set aside while clafoutis is baking.

To serve, spoon over macerated cherries and dust with icing sugar.
