- 1 lemon, rind finely grated
- 80grams prosciutto
- 250grams crackers (to serve)
- 250grams cream cheese
- 150grams goats cheese
- 1teaspoons thyme leaves, chopped
- 1tablespoons chives, chopped

Method
Step 1 of 4
Dry fry prosciutto in a non-stick frying pan over medium heat for 3 minutes or until crisp. Cool.
Step 2 of 4
Finely chop prosciutto in a small food processor. Transfer to a small bowl and stir in chives. Process cheeses, lemon rind, thyme and 1/2 tsp ground black pepper together until smooth.
Step 3 of 4
Lay a 30cm length of plastic wrap on the benchtop. Spread the prosciutto mixture over the centre of the plastic, about 7cm wide and 24cm long. Spoon cheese in a rough log shape, along one long side of the prosciutto mix. Using the plastic, lift and roll the log away from you and coating with the prosciutto mix. Twist ends to seal. Chill for at least 1 hour.

Transfer to a platter and serve with crackers.
